Blueberry Bites

So yesterday I was craving something sweet. I knew cutting out sugar was going to be the hardest part for me.  Well I woke up his morning still craving sugar, so I worked out and had tea and flavored water with fresh fruit.  Nope still needed something else.  So I decided to adjust a recipe I have for blueberry muffins for bites.  They taste great and was exactly what I needed this morning!  Granted while making the second batch, my toddle some strolled out to our living room and needed me so I totally burned the second batch.  But hey it happens, at least once a week in my house.  


 Blueberry Bites
1 1/2 cups of almond flour

1/2 cup of coconut flour

1/2 a tablespoon of baking powder

1/2 a teaspoon of salt

1 medium lemon seeded and juiced

1/3 cup of ghee

1/3 cup of honey

1 teaspoon of cinnamon

1/2 cup of warm water

2 large eggs

Mix these ingredients very well and then add in 1/2 a cup of blueberries, some peaople use a blender to really mix up the flours but I like the texture.  But always an option for smoother batter. 

Preheat oven to 350°F, place a casserole dish with water on the bottom rack, this will help the almond flour not brown out and give the moisture for the bites to rise.

I use a donuts hole pan.

Grease pan then fill each hole by spooning in batter.

Place on center rack and bake for 10-13 minutes 

Remove and let them rest on a wire rack. These will last a week in the fridge and can be frozen as well.

This will make approx 32 bites

*Make sure there isn't too many blueberries in one pan or else they will fall apart.
